A big thanks to all who submitted recipes to the Holiday Hand-Me-Down Recipe Contest!

Curried Pumpkin Soup

½ lb fresh mushrooms, sliced

½ cup chopped onions


2 Tbs. butter or margarine

2 Tbs all-purpose flour

½-1 tsp curry powder

3 cups vegetable broth

15 oz can 100% solid pack pumpkin

12 oz can evaporated milk

1 Tb honey

½ tsp salt

¼ tsp pepper

¼ tsp ground nutmeg

Fresh chives – optional

In a large saucepan, sauté the mushrooms and onions in butter until tender.

Stir in flour and curry powder until blended. Gradually add the broth, and bring to a boil. Cook and stir for two minutes or until thickened.

Add the pumpkin, milk, honey, salt, pepper, and nutmeg. Heat through. Garnish with chives. Yield 7 servings.

Mom’s Christmas Sugar Cookies

3 eggs

2 cups brown sugar

1 cup butter

1 cup sour milk

1 Tb vanilla

2 Tbs cream of tartar

2 tsp baking powder

4 cups all-purpose flour

2 cups whole wheat flour

Mix sugar, butter and eggs. Add remaining ingredients. Drop by teaspoon onto greased cookie sheet.

Bake at 350° till light brown, 8-10 minutes. When cool icing and add sprinkles if wanted. Yield: 4 dozen

5th Avenue Pudding

1 large package instant vanilla pudding

12 ozs cool whip1/4 cup butter

1 ¾ cups graham cracker crumbs

½ lb 5th Avenue Candy, crushed

Follow the directions on package for pudding. Let sit 5-10 minutes. Mix cool whip into the pudding. Melt the butter and pour over cracker crumbs.

Put a layer of cracker crumbs in a dish, then a layer of candy, then a layer of pudding. Alternate layers until done. Finish with a cool whip layer topped with cracker crumbs and candy (I use 5th Avenue candy bars). Refrigerate. Very good and easy.

100% Natural Squares

2 cups chopped apples

1 cup vegetable oil

1 ¾ cups sugar

3 large eggs

1 tsp pure vanilla

½ cup raisins

2 cups flour

1 tsp baking soda

1 tsp salt

1 cup chopped pecans or walnuts

1 cup honey – optional

1 cup shredded coconut – optional

Grease and flour a 9x13 pan.

Mix with a spoon in a large bowl: apples, oil, sugar, eggs, and vanilla. Add raisins and mix well. In a separate bowl mix: flour, baking soda, salt, and cinnamon.

Combine flour and apple mixtures and mix well. Add chopped nuts and mix well.

Spread batter thinly in floured pan and bake for 45 minutes at 350°. When cool, spread honey over top and sprinkle with coconut. Cut into squares and serve.
