Through My Kitchen Window - Pumpkins!!!

In my mind, fall equals pumpkins. And while many other seasonal delights (hot apple cider, hay rides, cool crisp air) fit into that equation, I really look forward to picking, eating, and carving pumpkins. So today, I’m sharing my favorite pumpkin recipes. Some old some new, but all delicious.
Grandma’s Pumpkin Cake
From Grace Horning
2 cups sugar
2 cups pumpkin
1 ˝ cups vegetable oil
4 eggs
2 cups flour
1 tsp salt
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
˝ cup chopped walnuts
˝ cup coconut flakes
Frosting:
˝ cup soft butter
8 oz soft cream cheese
1 box confectioners sugar
1 tsp vanilla
˝ cup walnuts
˝ cup coconut flakes
Preheat the oven to 350°. Mix all the cake ingredients together. Grease and flour two 9 inch cake pans and add batter. Bake 45 mins. Mix together frosting and frost while warm.
Crockpot Pumpkin Beef Stew
1 pound stewing beef, cut into 1 inch cubes
1 Tb flour
2 Tbs butter
1 large onion
1 cup chopped carrots
2 cloves garlic
1 pumpkin or acorn squash
2 large potatoes
1 tablespoon chile pepper paste or minced hot pepper
Salt and pepper to taste
2 cups beef stock
2/3 cup frozen lima beans
2/3 cup frozen corn
Chop the onions and carrots. Mince the garlic. Peel, seed and cube the pumpkin. Peel and cube the potatoes. Cut the beef into 1 inch cubes, season with salt and pepper, and coat in the flour. Sauté in the butter until browned.
Layer the veggies, potatoes, and beef in the crockpot. Add the salt, pepper, and broth.
Cook on low 6 hours. Add the lima beans and corn, and cook until heated.
Pumpkin Cinnamon Torte
Bottom layer:
1 egg
1 pkg (18.25 oz) yellow cake mix
1/3 cup melted butter
Grease a 9 x 13 cake pan. Set aside 1/4 cup cake mix. Mix eggs and butter into remaining cake mix, and press into bottom of pan.
Pumpkin layer:
1 can (30 oz) pumpkin pie mix
2 Tbs sugar
2/3 cup evaporated milk
2 eggs
1 tsp cinnamon
Preheat the oven to 350°. Mix ingredients for the pumpkin layer. Pour on top of the crust. Mix the remaining cake mix with a little cinnamon, and sprinkle over top. Bake 45 minutes, or until the pumpkin filling is set.
