In my mind, fall equals pumpkins. And while many other seasonal delights (hot apple cider, hay rides, cool crisp air) fit into that equation, I really look forward to picking, eating, and carving pumpkins. So today, I’m sharing my favorite pumpkin recipes. Some old some new, but all delicious.

Grandma’s Pumpkin Cake From Grace Horning

2 cups sugar 2 cups pumpkin 1 1/2 cups vegetable oil

4 eggs 2 cups flour 1 tsp salt

2 tsp baking soda 2 tsp baking powder

2 tsp cinnamon 1/2 cup chopped walnuts

1/2 cup coconut flakes Frosting:

1/2 cup soft butter 8 oz soft cream cheese

1 box confectioners sugar 1 tsp vanilla

1/2 cup walnuts 1/2 cup coconut flakes

Preheat the oven to 350 degrees . Mix all the cake ingredients together. Grease and flour two 9 inch cake pans and add batter. Bake 45 mins. Mix together frosting and frost while warm.
