Why is raw fish like sushi ok to eat, but other fish must be cooked? – Joel in Reading

The FDA requires that fish used in sushi are frozen at -4° F for 7 days or flash frozen at -31°F for 15 hours. This kills all bacteria in the fish. At typical freezer temps (0 °F) bacteria is immobilized, but not killed. When temperatures rise (thawing the fish to eat) the bacteria revive. So it’s important to thoroughly cook fresh fish or fish frozen around 0° F to kill all bacteria.

What is sulfur dioxide in dried fruit, like apricots? – Casie in Lebanon

Sulfur dioxide is one of many sulfur based chemicals known as sulfites. Sulfites are used as a preservative and to keep fruit from browning. Treating apricots with sulfur dioxide before dehydrating retains their orange color.

The FDA states that sulfites are safe to eat, but also admits that the effect sulfites have on our body is not completely understood. It is recommended that people with asthma avoid sulfites because they are linked to respiratory (as well as neuoroligical and gastrointestinal) problems.

I recommend buying dried fruit without sulfites. They won’t be as pretty, but avoiding sulfites is worth it.

Your Recipes:

Italian Roast Beef

From Rose in New Holland

Rose says her family makes this roast beef every Sunday, and uses the leftovers for roast beef sandwiches during the week.

- 1/4 cup kosher salt

- 1/4 tsp black pepper

- 3-6 cloves minced garlic or 1/4 cup powdered garlic

- 1/4 cup dried basil

- 1/4 cup dried oregano

- 2 1/2 to 3 1/2 lb beef roast

- 1/4 cup olive oil

Set your oven rack as low as it will go and preheat the oven to 300°.

Mix all the spices together.

Trim the fat from the roast. Cut the fat into small pieces and place them on the bottom of your roasting pan. Sprinkle with a little of the spice mix.

Place the roast in the pan and rub with the spice mix. Drizzle the olive oil over the roast and rub in.

Roast uncovered for 1-2 hours until the internal temp is 130° for rare, 140° for medium, or 160° for well done. Serves 6.
