This week we are going to jazz up our homemade mayo for use on burgers, tacos, steaks, or as a dip. Elevate your mayo with these amazingly easy and delicious recipes.
Homemade Cesar Dressing
This recipe takes about 10 minutes to make, and yields about 1 1/2 cups dressing. If you don’t like anchovies, substitute a few tsps of Worcestershire sauce.
3 anchovies
1 clove garlic
1 1/2 cups mayo
3 Tbs lemon juice
Salt and fresh ground pepper
Sprinkle a pinch of salt over the anchovies, and crush into a fine paste (a mortar and pestle work best). Drizzle with a little olive oil if needed. Do the same for the garlic.
Stir the anchovies and garlic paste into the mayo. Add the lemon juice and salt and pepper to taste. Mix well. Add more lemon juice or olive oil if it’s too thick, or more mayo if too thin.
Garlic Lime Mayo
This recipe takes about 10 minutes to make, and yields 1 cups mayo. Use it on hamburgers, tacos, or as a dip.
1/2 cup mayo
1/4 cup red onion
1-2 cloves garlic
1/4 tsp lime zest
1 Tb lime juice
Mince the onion and garlic. Zest and juice the lime. Mix well.
Green Chile Mayo
This recipe takes about 5 minutes to make, and yields 1 1/2 cups mayo. Substitute jalapeños for more heat, or a green bell pepper for no heat. Use it on burgers, tacos, or eggs.
1 cup mayo
1-2 cloves garlic
1 poblano pepper
1 Tb lime or lemon juice
Salt and fresh ground black pepper
Roast the pepper. Do this by holding the pepper over a gas burner until charred or under the broiler for 5-10 mins. When cool rub off the skin and remove the stem.
Place all ingredients except the salt and pepper in a food processor or blender. Process until smooth.
Onion Dip
This recipe takes about 15 minutes to make and yields 1 1/2 cups dip. Feel free to add more onion, or use fresh garlic. Use as a chip and veggie dip.
1 Tb olive oil
1 small or medium onion
1 cup mayo
1/2 cup Greek yogurt or sour cream
3/4 tsp garlic powder
1/2 to 3/4 tsp onion powder
1/2 tsp Kosher salt
A few grinds black pepper
Fresh or dried chives
Finely dice the onion and sauté in the oil until golden brown.
Mix all the ingredients together, and sprinkle with minced chives. Chill for 1-2 hours before serving.
