Kalina Rhoads, from Barto, has enjoyed serving as the 2015-16 Berks County Lil Miss Dairy Princess. She has had a lot of fun handing out ribbons and ice cream at the county fairs, riding in parades and singing her song, “Do you Want to Raise a Holstein,” at various meetings and banquets. She especially liked visiting the Kindergarten and first grade classes at the local elementary schools and showing the students different things that are found around a dairy farm.

The students were amazed by the size of the bottle fed to a calf, intrigued by the magnet used to prevent hardware disease and loved seeing an eartag (earring) that farmers use for animal identification. It has been a special year, and as Kalina ends her reign, she would like to leave you with this delicious recipe that is perfect for the summer picnics that are right around the corner.

Yum-Yum Ice Cream Cake

* 60 Ritz crackers (rolled fine)

* 1/2 cup BUTTER* 2 packs Instant Pudding (3.4 oz. size)

* 1 1/2 cups MILK* 1/2 gallon ICE CREAM

Melt BUTTER. Mix in crumbs. Use mixture to line bowl – keep 1/2 cup out for top. Mix 2 packs instant pudding in 1 1/2 cups of MILK, beat until thick. Add 1/2 gallon of ICE CREAM. Beat and pour into bowl. Put remaining crumbs on top. Put in fridge.
