Dairy Recipe: National Ice Cream Sandwich Day calls for celebration

Another year has come to celebrate American’s second best-selling ice cream novelty, the ice cream sandwich. Ice cream sandwiches have been around since the early 1940s. Vanilla, chocolate and a combination of the two, are the most popular. Originally ice cream sandwiches were created by hand and first distributed by New York street vendors.

In 1945 the first ice cream sandwich was mass-produced on a production line. Jerry Newberg is known for creating the ice cream sandwich version we eat today while selling ice cream at Forbes Field, Pittsburg. While ice cream sandwiches are only the second novelty, if you were to line the sandwiches made last year end to end, they would circle Earth three and a half times.

To celebrate National Ice Cream Sandwich Day, grab a box of ice cream sandwiches and create this yummy recipe for an Ice Cream Sandwich Cake.

Ice Cream Sandwich CakeIngredients:

24 vanilla ice cream sandwiches, unwrapped

2 ( 8 ounce) containers whipped topping, thawed

1 ( 12 ounce) jar hot fudge ice cream topping, warmed

1 (12 ounce) jar caramel ice cream topping

1/4 cup chopped pecansDirections:

Arrange a layer of ice cream sandwiches in the bottom of a 9×13-inch dish; top with a layer of whipped topping, hot fudge topping, and caramel topping. Repeat layering with remaining ice cream sandwiches, whipped topping, hot fudge topping, and caramel topping, ending with a top layer of whipped topping. Sprinkle with pecans. Cover dish with aluminum foil and freeze until set, at least 30 minutes.
