We all have things we hate. For two of my children, the squeaking of Styrofoam sends them into a tizzy and, coincidentally, both my husband and I detest those wooden spoons that accompany Italian ices. For one of my daughters, it’s peach fuzz. She refuses to touch the skin of a peach. She even makes the customers bag their own at our farm stand.

Peach season is now in full swing, and I’ve noticed that this year’s crop not only tastes delicious but is incredibly fragrant. A handful of them sitting on my bakery counter overnight resulted in the entire bakery smelling like an orchard the next morning.

It occurred to me that I should be using peaches more frequently to take full advantage of their limited availability. I wanted to make something different for dessert because so often, peaches are used for cobblers or dumplings or other heavy-handed desserts and, as incredulous as it may sound, we are tired of eating pie. When I stumbled on this recipe, I realized how perfect it is for my family who love to enjoy refreshing ice pops after working in the sun at the farm.

Pineapple Peach PopsIngredients:

2 cups sliced and peeled peaches

1/4 cup white sugar1 1/3 cup pineapple juice

1 tablespoon lemon juiceInstructions:

Place the peaches and sugar in a bowl, stir and cover with plastic wrap and refrigerate for 10 minutes. Place the peach mixture and juices in a blender and “mix” until smooth. Pour into plastic pop molds. Freeze for 4 hours. Enjoy!

The best part about this recipe is that it does not require those wooden spoons to enjoy and with some easy modifications, an “adult” version of these can be easily made because after a long day of working in the sun at the farm, us grown ups could use a treat as well.
